Step 1
In a sauce pan combine 3 cups of sugar and 3 cups of water for the simple syrup and bring to a boil. Once boiling add fresh lemon juice and boil for an additional 10 to 15 minutes until thickens and coats the back of a spoon and then move to the side to cool. Preheat oven to 350° combine all dry cake ingredients in a large bowl add wet ingredients mix well pour batter into a greased 9 x 13 pan and bake at 350° for about 25 to 30 minutes until golden brown. Once cake is done pour cooled simple syrup over the cake covering all of it and let the cake absorb it. (I did about 3 cups) Top with pistachios or shredded coconut if desired and serve!
