Instructions
Step 1
Get your butcher to score the skin of the pork or you can do this with a sharp knife
Step 2
Flip over and completely cover in the five spice
Step 3
Drizzle the skin side with oil and give a generous coating of table salt and a sprinkling of sea salt
Step 4
Place on a rack over a oven tray with water.
Step 5
Cook at 150 for 3 hours
Step 6
After three hours turn the oven up to its highest setting and cook till all the crackling is crispy. Approx 20-30 mins
Step 7
Allow to rest for 15 mins then cut into bite size pieces
