Instructions

Step 1
1. Marinate the paneer with all the ingredients above and set aside for 10 mins
Step 2
2. Grill the paneer cubes on a skewer or shallow fry in a nonstick pan (you can completely omit the marination of the paneer too and add it straight to the curry)

3. Heat oil in a deep pan, add the dry spices (cinnamon, green cardamom, black cardamom, cloves), sauté for a few seconds
Step 4
4. Now add puréed tomatoes and cook until the raw smell of the tomatoes goes away
Step 5
5. Now add ginger-garlic paste, chilli powder, turmeric powder, tandoori powder and salt, mix well.
Step 6
6. Cover and cook on a low heat until the oil separates from the masalas
Step 7
7. Now add the the cashew paste if using and mix well. (Soak cashews in hot water for half and hour, then blend to make a paste)
Step 8
8. Then add the double cream and stir until combined.
Step 9
9. Cover and let the gravy simmer on a low heat for 2-3 mins
Step 10
10. Now add the grilled paneer cubes and mix well.
Step 11
11. Add half a teaspoon of sugar to enhance the taste and kasoori methi.
Step 12
12. Garnish with coriander and enjoy with naan or chapatis 😀
