Soy Salmon with Sweet Potato Mash

Instructions

Step 1
Peel & chop the sweet potato into small chunks. Put the sweet potatoes in a large pot and add just enough cold water to cover them. Bring to a boil and cook until fork-tender, about 15 minutes.
Step 2
While the potatoes are cooking, chop your spring onions. Line an oven proof dish with tin foil & add the salmon. Sprinkle over the spring onions and soy sauce. Fold the tin foil loosely over the top of the salmon to form a parcel.
Step 3
Place the salmon in the oven on 180 for 20 minutes.
Step 4
Drain the potatoes and return to the pot on the stove top with the burner turned off. The residual heat from the pot will help any excess water burn off.
Step 5
Add some seasoning and mash until smooth and well-combined.
Step 6
Cook the peas following the pack instructions. Remove the salmon from the oven & plate up with the mash and peas. Serve immediately.
