Ingredients
6 servings
1 Tbspbutter
or olive oil
1white onion
diced
2garlic cloves
½ tspdried oregano
1 tspdried basil
½ tspred pepper flakes
1 lbItalian Sausage
chopped or bulk
1 lbsred potatoes
cubed
4 cupschicken broth
or vegetable
6 ozleafy greens
such as chard, kale, or collards
½ cupcream
heavy cream, half-and-half, or sour cream
parmesan
for serving
crusty bread
for serving
Instructions
Step 1
Melt the butter in a large pot over medium heat. Add the onions and saute until they start to soften. Add the garlic and spices, cooking for another minute.
Step 2
Add the sausage to the pot, stirring frequently until it starts to brown. This should take around 8-10 minutes.
Step 3
Add the potatoes and broth. Increase heat to high and bring to a boil, then cover the pot and reduce to a simmer.
Step 4
Let the soup simmer until the potatoes are tender, around 15-20 minutes.
Step 5
Add the greens and cook for another 5 minutes. Remove from heat, and stir in the cream. Taste the broth and add salt and pepper, if desired.
Step 6
Top bowls of soup with finely grated Parmesan, and serve with crusty bread.
