Instructions
Step 1
1. Transfer gently the sourdough starter to a large bowl. Add activated yeast, all-purpose and whole-wheat flours and salt water.

2. Pour the water down the sides of the bowl and mix all together. (Flour hands if needed)

3. Let it rest for 45min to 1h in a warm area. It should double in size.
Step 4
4. Once risen, scraper to turn the dough out from the bowl onto the floured work surface. Gently lift the dough it will stretch out. Tilt the dough so that the top and bottom edges fold underneath, creating a seam.
Step 5
5. Working diagonally, from the top left corner of your work surface down to the bottom right corner of your work surface, gently tuck the dough underneath itself as a guide to keep the dough’s shape. Repeat this motion until the surface of the dough is taut. You’ll know you’re using the correct motion if the seam at the bottom of the dough is very small and tight.

6. Transfer the dough, too up, to a bowl covered in a light towel. Let the dough rest for another 2h
Step 7
7. After 1.30h then the oven on at 240C with the cocotte to warm up.
Step 8
8. Flit the dough from the towel proofed bowl into the lightly floured cocotte and cook closed for 20min.
Step 9
9. Open the cocotte and cook for another 20-30min (depends the color of the sourdough)
Step 10
10. Once ready remove from the oven into a cooling rack for about 1h (aka until you can hold the loaf without it being warm)
