Instructions

Step 1
Preheat the oven to 375°F. Prepare a rimmed baking sheet by lining it with foil and coating lightly with oil.

In large skillet, warm oil over medium-high heat. Add onion and celery and cook, stirring frequently, for about 5 minutes or until softened. Add garlic to the skillet and sauté for another 1 minute.

In a large bowl, mash the beans with a potato masher or fork into a thick paste and add the cooked veggies. Stir in bread crumbs, cumin, egg, salt, and pepper. Make four patties with your fingers and arrange them on the baking sheet. Bake for about 10 minutes per side or until firm and set. Serve with whole grain buns with sliced red onion, tomato, and lettuce, if desired. ~When buying beans, it is cheaper to buy dried beans and cook them yourself than buying already canned beans.
