SLOW COOKER BEEF BRISKET with veggies and gravy π
SLOW COOKER BEEF BRISKET with veggies and gravy π Did you know, you can not only make the BEST, melt in your mouth, fall apart beef brisket in the slow cooker, but you can also cook all your veggies alongside it?! This is proper comfort food on a budget; put it on in the morning and itβs ready for dinner (plus the house smells incredible!)
Oh, and any leftover beef and gravy is amazing in a sandwich the following day! Go on, give it a try! π
Ingredients:
beef brisket (my joint was just under 1kg)
salt and pepper
garlic oil
4-6 carrots, chopped
3-4 potatoes, chopped
1-2 parsnips, chopped
650ml gf stock
4 tbsp red wine vinegar
3 tbsp gf soy sauce
half tsp thyme
1 tsp garlic oil
2 bay leaves
2 tbsp tomato puree
100g green beans
Method:
1) Season the beef with salt and pepper, then sear either in the slow cooker pan on the hob or a separate pan in a little garlic oil until sealed and coloured on all sides.
2) Place the carrots, potatoes and parsnips into the slow cooker, followed by the beef and all the other ingredients except the green beans.
3) Lid on and then cook on high for about 6 hours or low for closer to 8 hours.
4) 30 minutes before it finishes, add in the green beans to cook through.
5) To make the gravy bring all the juices to the boil and stir through cornflour mixed with a little water (1.5 tbsp cornflour mixed with 3 tbsp water), keep stirring and then simmer until it thickens to your liking
6) Serve up the beef, all the veggies and gravy alongside some of my air fryer yorkshire puds I you fancy!
