Instructions

Step 1
• Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal. • In a large bowl, mix together the melted butter and sugar until well combined. • Add in the eggs, lemon juice, lemon zest, and vanilla extract, mixing well until fully incorporated. • In a separate bowl, whisk together the flour, baking powder, and salt. • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. • Gently fold in the diced strawberries. • Pour the batter into the prepared baking pan, spreading it evenly with a spatula. • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Allow the blondies to cool completely in the pan set on a wire rack. • While the blondies are cooling, make the glaze. Combine the powdered sugar, strawberry puree, lemon juice, and lemon zest in a bowl, whisking until smooth. • Once the blondies have cooled, remove them from the pan using the parchment paper overhang. Drizzle the glaze over the top, spreading it out with a spatula to cover the blondies evenly. • Cut into squares and serve. Enjoy!
