Instructions

Step 1
Fry bhindi in about 2 cups oil until the stringiness goes away and it slightly changes colour. (I used frozen bhindi from asda and defrosted it but you can use fresh and chop it up in 1cm pieces. I fried for 10-15mins) Tip: to save time, you can start preparing masala while bhindi is frying and use some oil from the bhindi pan.
Step 2
Take bhindi out once done, drain excess oil and fry whole zeera with 1 onion until golden
Step 3
Add ginger and garlic pastes and cook for a minute
Step 4
Add chopped green chillies, tomatoes & spices (salt, red chilli flakes, cumin, coriander, turmeric and pomegranate powder). Mix and cook the masala on low heat for 5 so it forms a paste and some oil comes to the top
Step 5
Mix fried bhindi in the prepared masala and add remaining sliced onions along with garam masala and fenugreek leaves
Step 6
Turn heat low, cover and cook on low heat for 10/15mins so masala gets into bhindi & onions
Step 7
Add corriander and green chillies for garnish
