Pineapple Chicken Boat

Instructions

Step 1
carefully cut the core out of both pineapple halves. Scoop out most of the remaining pineapple and roughly chop it. Reserve chopped pineapple in a bowl. Set aside the pineapple halves.
Step 2
Heat oil over medium heat in a medium saucepan. Once the oil is warm (not hot), add the ginger, garlic and bell pepper. Sauté until garlic and ginger are fragrant, about 3-4 minutes.
Step 3
Add the chopped pineapple, vinegar, brown sugar, soy sauce, red pepper flakes and salt to the pan. Stir to combine and simmer for 1 minute to form a sauce.
Step 4
In a large bowl, combine the chicken and 1/2 of the sauce. Marinate for at least 30 minutes or up to 6 hours. Reserve the remaining sauce for serving.
Step 5
After chicken has marinated, preheat the grill on high
Step 6
Once grill is hot, place chicken and pineapple halves cut side down on the grill
Step 7
grill on high for 6 minutes with the lid closed
Step 8
pull pineapple off the grill and reserve for serving. flip the chicken and grill for an additional 6 minutes or until chicken is cooked to an internal temperature of 165F
Step 9
While the chicken cooks, prepare the rice according to package directions.
Step 10
in a small saucepan, heat the remaining sauce to a simmer over medium heat and whisk in cornstarch mixed with water to thicken
Step 11
once cooled slightly, roughly chop the chicken
Step 12
divide the rice between the 2 pineapple halves. top with the chopped chicken and pour the remaining sauce over the top.
Step 13
garnish with sliced green onions and serve out of the pineapple halves
