I moved from N. Hollywood to Atlanta and The Bronx. The thing I miss most about LA is the street food, particularly the birria and consome. It’s near impossible to find where we live, and the little we did track down tasted like cardboard and punishment.
So we decided to try our hand at this flavor-rich Mexican specialty and found inspiration from a fellow TikToker named @justdonniekicks, but we made it authentically our own and slow cooked it overnight, a method we’d never seen employed for this. My God. The complexity and flavor! It feels like you’re cheating and getting away with it. We’ll be making this again and again (with double the meat next time). We enjoyed ours with cilantro and onions, fresh salted avocado slices, and lime wedges. Then we ate the gravy like soup.

Instructions
Birria y Consume
Step 1
Turn slow cooker on low. Clean, salt and pepper, and brown your meat. (I shouldn’t have to tell you how.)
Step 2
Peel your carrots and knob of ginger. Rough cut carrots, ginger, and green onions.
Step 3
Add all Birria y Consome ingredients to the slow cooker. Season heavily. Top up and leave it be for 8 hours (go to work or go to sleep).
Step 4
Separate the meat and the vegetables adding all the veggies and roots to a blender. (Try not to taste the meat. You won’t be happy yet.) Break up the meat and add it back to the slow cooker.
Step 5
Add more seasonings and bouillon to the blender of veggies. Blend until it looks like a textured sauce.
Step 6
Add your blended sauce back to the slow cooker and stir. This is your consome.
Assembling Tacos
Step 7
Heat some frying oil in a pan. Add corn tortillas in batches. Fry for a few seconds, then flip.
Step 8
Add cheese to flipped tortillas. Add Birria meat. (You can add cilantro and onions now or at your plate). Fold taco in half and fry on both sides until crisp and cheesy. Remove to platter. Repeat until desired number of tacos are assembled.
Step 9
Serve Birria tacos with a cup of consome topped with cilantro and onions and your favorite garnishes on the side.
