TURMERIC GARLIC-RUBBED FISH IN PARCHMENT
This turmeric garlic paste gives a tasty, healthy boost to all kinds of foods. I use the same flavorful paste with carrots, and in roasted vegetable soups, where I roast the veggies in it before blending. This recipe is great for an easy weeknight meal because the paste is simple to make, and cooking fish in parchment is a foolproof way to prepare fish perfectly. If you love this paste as much as I do, make a big batch and keep it in the fridge for a week or two—it will make this dish or any other meal even easier to throw together

Instructions
Step 1
Preheat the oven to 400°F.
Step 2
Put the garlic, turmeric, cumin, cinnamon, salt, cayenne, and olive oil in a food processor and blend until smooth.
Step 3
Place 4 pieces of parchment (large enough to wrap the fish) on a large baking sheet. Place a piece of the fish on top of the parchment and rub it with ¼ of the rub mixture. Wrap the fish in the parchment by folding up the two long sides and rolling it down toward the fish, stopping just above the fish. Then twist the sides to keep the wrap in place. Do this to each piece of fish, arranging them in a row on the baking sheet as you go, then put the sheet in the oven for 15 minutes.
Step 4
To serve, either remove from the parchment or place each piece of fish in the parchment on an individual plate. Be sure to open up the parchment or else the fish will keep cooking. Serve warm.
