Step 1
Heat the oil on a medium heat. Add the half onion and a pinch of salt and fry for 8 -10 minutes. The onions should be sticky and golden brown. Add the one clove of sliced garlic and grated thumb sized ginger and cook for a further minute.
Step 2
Add the chicken to the pan and fry for 5 minutes and then stir in the spice paste, 200gms tomato and 125 mls of water. Bring the mixture to the boil then turn the heat down and simmer gently, uncovered for about 25/30 mins until rich and slightly reduced. Stir through the 50 gms yoghurt, 25 gms almonds and chopped coriander. Serve with Basmati Rice.
