Ice Cream Mochi

This is a delicious Japanese dessert! Made easily at home.

Instructions

Step 1
Using the cookie scoop, scoop out ice cream into paper/silicone cupcake liners. The ice cream will melt quickly so Freeze them for two hours.
Step 2
Combine Mochiko with erythritol and water mix well until combined and cover with Saran Wrap. Microwave for 1min and than mix. Repeat once again and mix. Last time microwave for 30sec and mix one last time.
Step 3
Use A LOT of cornstarch on the surface and roll the dough out until it becomes a thin sheet -about 2-3mm thick. Use a cookie cutter or anything round. Cut out circles your desired width. THE BIGGER THE BETTER :)
Step 4
Work fast and take out your ice cream from the freezer. Place the ice cream ball in the centre of the dough circle. Fold the dough so all of the sides attach together. Place the ball inside a Saran Wrap and tighten it and shape a ball like Mochi. Place it back in the freezer. Repeat until done.
Step 5
Defrost a little and enjoy!
