Chicken broth with meat

Instructions

Step 1
Clean out spine of bird to remove organ debris that will make the broth bitter. Discard bag of giblets.
Step 2
Mix veg with half the salt and place in instant pot. Sprinkle chicken inside and out with remaining salt. Place chicken in pot on top of the vegetables, breast up. Add ginger and thyme sprigs, pour water over all, making sure to not overfill.

Step 3
Set pot to Manual, 20 min, high pressure, double check vent is set to seal. Natural release 10 minutes, then rapid release. Let cool 15 minutes before removing the meat and straining the broth. Defat if necessary.
