Step 1
Preheat oven to 200C (fan)
Step 2
Peel the butternut squash and slice as thinly as possible. Once you get to the seeds scoop them out and keep slicing.
Step 3
Chop the rosemary.
Step 4
Mix garlic granules and 1tsp of rosemary with the heavy cream.
Step 5
Oil the baking dish and begin layering all the ingredients. First butternut squash, then half of the leek, salt and pepper, and 1/3 of the heavy cream mixture. The second layer is the same. For the top layer place butternut squash (keep the prettiest slice for the top), salt and pepper, pour the remaining heavy cream mixture and sprinkle with nutmeg.
Step 6
Cover with aluminium foil and bake for 1 hour.
Step 7
When ready sprinkle with cheese and pine nuts and bake uncovered for another 10-15 minutes.
Step 8
Garnish with remaining rosemary.
