Pasta - Shrimp, zucchini and saffron heavy cream

Pasta is one of the most famous italian dishes. It is easy to make and most of the times all the ingredients are sitting in the fridge. This version is with zucchini, shrimps and saffron heavy cream.

Instructions
Step 1
Wash the zucchini and slice them in any shape you prefer.

Take a pan, switch on the heat on hig temperature and then ease down the zucchini. Let the zucchini on the stove as long as it takes to make them a little crispy. It should take ten minutes more or less. Once the zucchini are ready, keep them aside.

Step 3
Take a small glas and put the saffron in it. Pour a couple of spoons of boiling water and mix so the saffron can melt.

Step 4
Warm up some water in a large pot and ease down the shrimps. Boil the shrimps for few minutes and then remove them from the water with a slotted spoon.

Step 5
Add some salt to the water and make sure that is still boiling before to ease down the pasta. Cook the pasta in salty boiling water as long as indicated on the box. For this dish it might be better to choose a short type of pasta.

While the pasta is getting ready, prepare the saffron sauce.
Step 7
Take a pan, and warm it up. When it is warm, ease down the heavy cream and the saffron. Stir well for a minute or two.

Add both the shirmps and the zucchini and stir again. If you feel that the sauce is getting too dry, add a spoon or two of the boiling water from the pasta.

When When the pasta is cooked, strain it and ease it down in the pesto for 2 minutes. If the pasta looks too dry, add a spoon of the water you used to boil the pasta.
