Step 1
Preheat oven to 350 degrees.

In small bowl, whisk together olive oil, brandy or vinegar, tarragon, and garlic. Season pork tenderloin with salt and pepper on all sides.
Step 3
Place tenderloin in shallow baking dish. Pour sauce over tenderloin and turn several times to coat. Bake 25-30 minutes or until done.
