Laupele Fritters

These fritters use laupele leaves, but here spinach is used. Potato can also be used instead of the breadfruit.

Instructions

Step 1
Blanche the spinach in boiling water, plunge into cold water, then squeeze to get the water out. Finely chop.
Step 2
Mash the cooked breadfruit and mix it with spinach in a medium bowl.
Step 3
Chop chives and add to the mix.
Step 4
Fold them in and make sure all the ingredients combine very well.
Step 5
Add the flour just to make it a firm batter.
Step 6
Season with salt and pepper.
Step 7
Heat up the oil in a frying pan.
Step 8
Shape into patties and fry on a medium heat until the fritters until golden brown.
Step 9
When the fritters are cooked take them out and put them on a plate with a paper towel to drain oil.
Step 10
Slice some avocado length wise place them in a star pattern then place the fritters in between the avocado slices. Just before serving drizzle fresh coconut cream on the fritters and serve.
