Chicken marinade
For cooking chicken
Teriyaki sauce
Instructions
Step 1
In a medium bowl, combine all ingredients of chicken marinade, sake, soy sauce and ginger. Marinade chicken for about 10 minutes.
Step 2
Combine all of Teriyaki sauce ingredients in a small bowl, mix well, and set aside.
Step 3
Heat 1 tsp of oil in a large skillet over medium-high heat. Once the skillet is hot, place chicken in the skillet and cook for 4 to 5 minutes on each side. Add one tbs sake, put a lid, medium heat, and steam until cooked through, about another 2 to 3 minutes.
Step 4
Add Teriyaki sauce mixture, add chopped tomato, and bring to a boil, reduce heat and simmer until the sauce gets thickened.
Step 5
Put rice, add arugula, add sliced chicken, and then pour Teriyaki sauce with tomato in a bowl.
