Step 1
Preheat the oven to 350°F (180°C).

Cream the brown & white sugar and the vegan butter together with an electric mixer. Add vanilla extract and mix in.

Now in the same bowl, add the flour, cocoa powder, baking soda, and salt, combine.

Add the 1 Tbsp almond milk and “knead” into a thick cookie dough.

Now if desired you can add chocolate chips, mix in. The cookie dough will be very thick, but easy to roll into balls.

Roll into 2Tbsp-sized balls and space them evenly on a parchment lined baking tray. Aim to get 10-12 cookies from the batch.

8. Bake for 10 minutes. The edges will be firm and the middle will be soft and chewy.

9. Press in a few chocolate chips to the top of the cookies While still hot if desired.

Let firm up on the tray for 5 minutes, then transfer to a cooling rack.
