Step 1
Heat oven to 350 degrees.
Step 2
Place corn tortillas on a cutting board. Using a pizza cutter, slice each corn tortilla into six triangles and spread out into a single layer on a baking sheet lined with parchment paper. Spray the tops with cooking spray and sprinkle with sea salt. Bake for 20 minutes, flipping halfway.
Step 3
While the chips are baking, place the ground turkey into a pan over medium heat. Cook until browned. Season with taco seasoning. Remove from the pan.
Step 4
Add the black beans and corn to the pan and cook over medium heat until warm. Turn off the heat. Weigh the ground turkey and divide the weight by four to get the amount needed to fill one serving.
Step 5
Place 12 chips onto a plate. Top with one serving of the ground turkey, ¼ cup of the bean and corn mixture, 2 Tbs. enchilada sauce, 1 Tbs. guacamole and 1 Tbs. Greek yogurt. Garnish with red onion, lime juice and chopped cilantro.
