Step 1
Cook rice
Step 2
Heat vegetable oil in large skillet. Remove chorizo from casing, crumble into pan and cook on medium, stirring.
Step 3
Add corn, zucchini, tomatoes, peppers, salsa and cook & stir until veggies are done.
Step 4
Add beans, spinach, and cheese and cook until spinach is cooked and cheese is melted.
Step 5
Add cilantro. Serve over rice.
