For the cream
Step 1
Start with the cream, as it will take some time to cool down.
Step 2
Take 100ml of milk, add two tbsp of sugar, pudding mix and flour, stir until all combined and no lumps remain. Whisk the egg yolks separately.
Step 3
Cook the rest of the milk with remaining sugar on med-high heat until it boils. Add dissolved pudding mixture and pour in the eggs, stir until combined. Cook for a couple of more minutes, stirring constantly, until the cream thickens and eggs are cooked through.
Step 4
Remove the pot from the stove, add butter and stir the cream to mix in the butter. Set aside to cool down.
Step 5
(optional) When the cream has cooled down, add whipping cream and mix everything with mixer on high speed.
Assembly
Step 6
Assemble the cake: start with a layer of lady finger biscuits soaked in pineapple juice (from the can), top with pineapple rings (whole, or cut into chunks) and spread a layer of cream. Repeat the circle(s) (depending on your bowl size and shape) until you use up all ingredients.
Step 7
Finish the cake with a layer of whipped cream and bits of pineapple if desired.
Note:
Step 8
When I don't have a plan for egg whites afterwards, I'd use just 5 egg yolks and 4 whole eggs for the cream. Don't notice the difference. 🤷♀️
