Step 1
Place your oven rack on the bottom shelf then preheat the oven to 210c
Step 2
In a bowl add paprika salt pepper garlic powder onion powder white pepper black pepper cumin cayenne thyme and olive oil then mix to combine .

Step 3
Place the whole chicken in the cast iron skillet then rub the seasoning all over . Get into all the nooks and crannies and rub some on the inside of the chicken also. Then put half a lemon 1 bulb of garlic with the top cut off and a handful of fresh rosemary inside the chicken. Use butchers string or elastic to tie the wings tight on the side of the chicken then place in the oven and cook approx 80 minutes . This time is for a 1.6 kg chicken so times may vary slightly depending on weight
