36. Laab Salad with Broccoli and Snake Beans

This is clearly not meant to be the most authentic laab - but it does make it a full delicious meal of its own! If you don’t have sticky rice, long grain or jasmine rice will still work, the result just won’t be quite as smooth. I like using V2 mince as my vegan mince.

Instructions

Step 1
Assemble the Laab dressing ingredients and combine.
Step 2
Toast glutinous rice in frying pan until golden, then take off the heat and grind, either in a mortar and pestle or a spice grinder, until it resembles a fine powder.
Step 3
Combine the broccoli and snake beans in the oil and garlic, and stir through the sauces, getting them coated. Spread on oven trays and oven bake at 200 degrees for 10 minutes.
Step 4
Cook the vegan mince in a hot frying pan, separating pieces so there are no large clumps. When sufficiently browned, take off the heat and combine with the other laab salad ingredients (the hot mince should soften the bean shoots slightly). Stir through the rice powder, and the dressing. Taste and adjust the seasoning.
Step 5
Serve the laab salad on a bed of the roasted (and hopefully still slightly crunchy) broccoli and snake beans.
