Step 1
Cut long green beans into 2-3 inch small pieces, throw in boiling water to cook for 3-5 minutes, transfer to iced water to cool off before plating (this step helps to maintain the crunchy texture and beautiful green color in green beans).
Step 2
In a bowl, mix in diced garlic and ginger, chopped scallion, then pour in sizzling oil to sear until aromatic. Further add in light soy sauce, dark vinegar, Szechuan peppercorn power, Szechuan chili powder (or any spicy chili powder /flakes you like), oyster sauce, sesame oil, sugar, finally garnish with sesame seeds.
Step 3
Pour the chili sauce over green beans, serve immediately! Enjoy!
