Instructions
Step 1
Add olive oil to a medium pot over medium low het. When the oil beging to shimmer add the onions and saute until soft, about 5 minutes

Add potatoes to the pot and saute for an addditional 2-3 mins

Add the green beans and stir until the beans are thoroughly coated with olive oil. Add the tomatoes, parsley, sugar, salt and black pepper. Stir to combine.

Step 4
Add just enough hot water to the pot to cover half the beans. Cover and simmer for 40 minutes or until there is no water left in the pot and the beans are soft. Do not allow the beans to boil.
Step 5
Allow the beans to cool until they are warm or until they reach room temperature, but do not serve hot
