Granny's Chicken Fried Steak

Instructions

Step 1
Season steaks with ¼ tsp salt and ¼ tsp pepper. Set aside.
Step 2
Combine cracker crumbs, 1 cup flour, baking powder, 1 tsp salt, ½ tsp black pepper, and red pepper. Place mixture in a shallow bowl.
Step 3
In a shallow bowl, whisk ¾ cup milk with eggs. Dredge steaks in cracker mixture, then the milk mixture, and then the crackers again, firmly pressing down steaks so crumbs fill the crevices.
Step 4
In a 12" skillet (not non-stick), heat oil to 360. Fry steaks 10 min. Turn and fry 4-5 min more until golden brown. (When you see juice oozing from the top of steaks, it's time to flip them.) Remove to a cooling rack set in a paper towel lined sheet pan. Put steaks in a 225 oven to keep warm. Drain and strain hot oil. Reserve 1 Tbsp oil and cooked particles in skillet.
Step 5
Whisk into pan ¼ cup flour, 1 tsp salt, 1 tsp black pepper, and 4 cups milk. Cook over med-high heat, whisking constantly, 10-12 min or until thickened. Serve gravy with steaks and mashed potatoes. Sprinkle with parsley.
