Instructions
Step 1
Place a medium pot on high heat
Step 2
Add veggie broth, 1 cup water, bring to boil, reduce heat to medium and cook for 5 mins
Step 3
In a blender, add tomato, onion, peanuts, garlic, ginger, red chilies, medjool dates, carrot, corn, curry, turmeric, peppercorns, Chinese five spice, 1 cup from pot and blend until completely smooth
Step 4
Empty contents of blender back into pot and allow to cook for 5 mins
Step 5
Add soft tofu into pot gently with basil, mix slowly and cook for 8 mins
