1shallot

1 cloveGarlic
small, minced
1 tspginger root
fresh, minced
½ tspgaram masala
½ tspDark brown sugar
½ tspkosher salt
¼ tspground cumin
⅛ tspDried ground coriander
0.5 poundboneless skinless chicken thigh
Uncooked thighs
2 TbspPlain lowfat Greek yogurt
2 Tbspcilantro
fresh, chopped, optional, plus sprigs
¼ cupred onion
chopped, Uncooked, thinly sliced
Instructions
Step 1
Stir together tomatoes, shallot, garlic, ginger, garam masala, brown sugar, salt, cumin, and coriander in 2-quart slow cooker. Add chicken. Cover and cook 2–3 hours on High or 4–6 hours on Low. Stir in yogurt and chopped cilantro.
Step 2
Divide evenly between 2 plates or shallow bowls. Garnish with cilantro sprigs and onion.
Step 3
Serving size: 1 chicken thigh and about 1/2 cup sauce
