Step 1
1. Preheat oven to 200°C
Step 2
2. Wash trout with water and pat dry with paper towel. Rub lightly with olive oil and season with salt and pepper (inside and on skin). Stuff with sliced lemon, parsley and garlic.

3. Wrap into a foil packet making a seam on the top of the fish

4. Bake for 15-20 minutes covers and a further 5 mins uncovers. Once cooked the flesh will pull apart from the skin easily
Step 5
5. Heat up 50ml vegetable oil and 50g unsalted butter and fry potato’s until golden brown. Discard oil and butter before putting potato’s in a baking tray with the broccolini and seasoning with salt, pepper, oregano, thyme, garlic granules and onion powder. Drizzle olive oil over the top and bake for 20 mins or until potato’s are fork tender.
