Step 1
Toast the sourdough
Step 2
Heat up a pan with coconut oil
Step 3
Add the veg to the pan and lightly fry
Step 4
Cut out a hole in the bread and place over the top of the veg
Step 5
Cover the hole in the whisked up egg, fry for 2 minutes
Step 6
Add some salt a pepper the replace the hole in the bread and flip the bread
Step 7
Top with smashed avocado, spring onion and pumpkin seeds and serve
