Instructions
Step 1
Crack the eggs into a bowl and whisk together with the cream and mustard Season with salt and pepper.
Step 2
Place a frying pan over a medium heat and warm for 30 seconds, then pour in the olive oil. Swirl the oil around the pan so that the pan is coated in the oil. Pour in the egg mixture and cook for a minute. Then draw the egg mixture from the sides of the pan into the centre, allowing the raw egg to runinto the uncovered surface to cook. It will only take 2 minutes to cook the egg mixture.
Step 3
Sprinkle over 70g (2 1/2oz) of the grated Gruy?re and the thyme. Cook for a further minute, then fold the omelette in half and serve with the remaining Gruy?re scattered on top. Serve with some steamed purple sprouting broccoli, a green salad or grilled courgettes.
