Instructions

Step 1
Prepare a quick marinade with some olive oil, lemon juice, chives and garlic. Leave it rest for half an hour in the fridge.

Remove the chives and the garlic from the marinade. Ease down the smoked salmon on a dish and brush it with the marinade. Let the salmon rest for another half hour.

Clean the romanesco broccoli and boil the tips in salty water until they are soft. Strain the broccoli and keep the water on the stove.

Step 4
Put the romanesco broccoli in a food processor. Keep some tips aside if you want to use them for the dish decoration. Add some salt and grated parmesan. Work the vegetables until they are a rough cream, adding some hot water if it is too dry.

Step 5
Put the rice into the water where we boiled the romanesco broccoli and let it cook as long as indicated in the box. It usually takes around 20 minutes.
Step 6
When the rice is ready, strain it. After a minute, put it back into the empty pot. Add now the romanesco broccoli cream and the smoked salmon. Keep some salmon aside if you want to use it for the dish decoration. Mix gently for a minute with a spatula and serve.
