Instructions
Step 1
Quarter onion and put in a saucepan with crushed garlic, bay leaves and lentils. Cover with 2 inches cold water and bring to a simmer. Add pinch of salt then simmer on low for 35mins.
Step 2
In a separate pan, fry off the chorizo then put aside. Pour the chopped tomatoes in with the chorizo oil and cook for 5 mins until caramelised. Stir then another 5mins and set aside.
Step 3
Add 1 tbsp oil to the pan and fry chopped onion, fennel, carrots, cayenne pepper and some more garlic for 10mins until soft and starting to brown.
Step 4
Add tomato, chorizo and Sherry vinegar and stir.
Step 5
Remove bay leaves from lentil pan, then combine all ingredients. Season and let flavours meld for 20mins on a low heat.
