Ingredients
4 servings
1 x 400gchickpeas
tin, drained & rinsed
400gkala chana
drained, washed & rinsed
1onions
peeled & diced
5 cmginger
peeled & grated
50gred peppers
washed, deseeded & sliced
150gsweet potatoes
peeled & diced
200gwhite potatoes
peeled & cubed
5gcumin powder
5gcumin seeds
5gcoriander powder
10gcurry powder
15gtomato purée
15mloil
1 ltrvegetable stock
made with 1 stock cube
5gsalt
coriander
Chopped, parsley, to finish
Instructions
Step 1
Heat the oil in a frying pan over a medium-high heat and fry the onions and garlic for 5-10 mins or until translucent. Add all the dry seasoning, mix well and add the Kala chana. Then add the stock and half the white potatoes and simmer for 20 minutes.
Step 2
Add the remaining potatoes and chickpeas and simmer for 25 minutes. Check that the liquid does not dry out.
Step 3
For the last 5 minutes of cooking add the sliced red peppers.
Step 4
Serve stew in medium bowls, sprinkle over the coriander or parsley to finish.
