Leftover veg? Chuck them in this easy peasy Egg Fried Rice! It’s quick, it uses up leftovers and is pretty cheap to make! 1. Prepare your veg and protein (I thinly sliced chicken!) 2. Fry your protein until sealed. Add in your veg (leave any spring onion or peas for now). Cook until slightly browning for extra flavour. 3. Whisk together an egg and 1 tbsp soy sauce. 4. Make a well in the centre of your pan. Pour the egg mixture in. Leave for a few seconds, then using a flat end wooden spoon, mix through your pan really quickly. 5. Add in COOKED rice and stir through until hot. If need be, add a drizzle more soy sauce to taste. 6. Serve!
