Cheesy broccoli potato patties

Instructions

Step 1
Pierce the potato all over with a fork. Microwave until cooked through (4-5 minutes). Let potato cook before peeling and slicing in half
Step 2
Meanwhile, in medium bowl, combine the oil, leeks (don't separate the rings), and garlic and toss to coat. Place the leek mixture in the air fryer basket and cook at 370 for 6 minutes or until the leeks are soft
Step 3
While leeks are cooking, transfer half of the potato to a large bowl and mash with a fork. Cut the other half of the potato into 1/8 inch dice (or use egg slicer). Add the diced potato to the bowl with the mashed potato.
Step 4
Transfer the leek/garlic mixture to a food processor. Add the broccoli and pulse until finely chopped. Add to the bowl with the potatoes, along with the cheddar, egg, and salt and mix until combined
Step 5
Form the mixture into 6 balls, each about 1/3 cup. Flatten them into patties about 1/2 inch thick. Spritz both sides of each patty with oil
Step 6
Cook in air fryer at 400 for 6-8 minutes, flipping halfway through
