Instructions
Step 1
Trim the edges of the cucumber and use the vegetable peeler to peel them into long strips. Continue until you reach the seeds, then flip over and repeat.
Step 2
Pat dry the strips very well.
Step 3
Line the cling film on a flat surface and start assembling the cucumber strips by overlapping to create a sheet.
Step 4
Pat dry again, then spread the cream cheese all over the cucumber sheet, leaving 1-inch from one side of the cucumber sheet empty. Season with salt, pepper, oregano and chilli flakes( you can use any seasoning you like)
Step 5
Thinly slice the avocado and place it on the cucumber sheet on one side.Drizzle with lime juice, then place seafood sticks on top of the avocado ( you can substitute with salmon or shrimps)
Step 6
Roll up the cucumber roll tightly.
Step 7
Cover with cling film and put in the fridge to chill for 1-2 hours.
Step 8
When ready, cut into 10-12 equal pieces, sprinkle with sesame seeds and chilli flakes and serve with soy sauce.
