1 tspgolden syrup
¾ cupSR flour
¼ cuparrowroot
or cornflour
1 pinchsalt
2 tspcocoa
2 tspcinnamon
1 dstspbutter
4 Tspmilk

Step 1
Separate eggs, beat whites to a stiff froth and gradually add sugar, beat until sugar is dissolved. Add egg yolks and golden syrup and mix well. Fold in sifted dry ingredients, boiling milk and melted butter.
Step 2
Pour mixture into greased lamington tin. Bake in moderate oven for 25-30 minutes. Turn carefully onto cooling rack, allow to cool completely.
Step 3
Cut into squares, pipe with whipped cream around edges, fill centre with apricot puree and decorate with split toasted almonds.
Apricot Puree
Step 4
Soak dried apricots overnight in cold water.
Step 5
Cook gently (in the water in which they have been soaked) until quite soft. Rub through coarse strainer and add sugar, salt and orange marmalade.
Step 6
Chill thoroughly before using.
