Instructions

Step 1
Soak the cashews in water for 4 hours.
Step 2
In a small sauce pan, heat olive oil and garlic gloves over low heat
Step 3
Cook until golden, stirring and smashing the gloves occasionally, about 6 minutes.
Step 4
Turn off heat and allow to cool for 5 minutes.
Step 5
Add chipotle powder and cumin to the warm oil. Allow to cool.
Step 6
In a blender, combine cashews, 1 cup water, nutritional yeast, 1.5 teaspoons salt, and the garlic/spice mixture. Blend until smooth, add 2-3 more tablespoons water if needed.
Step 7
Add the tomatoes, green chilies and 1 teaspoon salt to the pot. Bring to a rolling simmer and reduce to low.
Step 8
Simmer for 8-10 minutes then turn off heat.
Step 9
Add the cashew "queso" to the tomatoes, stir to combine.
