Apple pie quesadilla

What can be better than sweet, hot apple pie? This hybrid of a quesadilla and an apple pie, of course! Serve with vegan ice cream, or with vanilla custard. EASY TIP If you struggle with turning a quesadilla in the pan, follow my advice above for fuss-free flipping!

Instructions

Step 1
1 Stir together the grated apples, maple syrup, cinnamon and sultanas in a bowl.
Step 2
2 Heat a griddle (grill) pan over a medium heat.
Step 3
3 Spread the apple mixture over one of the tortilla wraps and carefully place it in the hot griddle pan. Lay over the other tortilla wrap and cook for 3–4 minutes.
Step 4
4 Place a large plate over the pan and invert the pan to tip the quesadilla onto it. Return the pan to the heat, then slide the quesadilla back into the pan, uncooked side down. Cook for a further 3–4 minutes.
Step 5
5 Remove from the pan and slice into 4 wedges. Sprinkle with a pinch of demerara sugar and serve hot.
