WIC Approved Oat Lefse with Homemade Jam

Lefse recipe is from King Arthur and is linked. Modification I made was 4 tsp oat flour instead of AP. You can use AP if you prefer traditional. I topped mine with crushed, homemade muddy buddies and powdered sugar.

1.75 Cpotato
peeled, cooked, and riced, boiling, lightly packed
4 tspoat flour
2 Tbspbutter
softened
2 Tbspmilk
¾ tspsalt
1 tspsugar
0.33 CAll-Purpose Flour
plus more for rolling

Step 1
In a medium sized sauce pan, heat frozen berries and about a tablespoon of water over medium heat.
Step 2
Bring berries to a simmer and add sugar. Mix well.
Step 3
Add in cornstarch and continuously mix until you feel the mixture begin to thicken. Lower the temperature to low while continuing to mix.
Step 4
Once desired thickness is reached (it will thicken a bit more once cooled) remove from heat and set aside. Any extras after this recipe can be saved in an airtight container for about a month.
