This delicious beetroot dip recipe is packed with so much flavour but requires minimal ingredients and a small amount of your time. A super tasty recipe idea that's perfect for entertaining. (hint hint, could be a good one for Easter entertaining!)
This dip is the perfect centrepiece for a cheese board/dip plate. I grabbed some dolmades, olives, grilled peppers and some sliced baguette to accompany the dip on the board.

450gbaby beetroot can
drained
1 cupraw cashews
⅓ cupplain greek yogurt plant based
0.5juice of lemon
½ tspsea salt flakes
½ tspcracked black pepper

Step 1
Boil the cashews for 15 minutes until soft then drain them and add to a food processor or blender along with the rest of the dip ingredients and blend until smooth
Step 2
Transfer to a bowl and then drizzle some extra virgin olive and top with the rest of the toppings and enjoy!
