Step 1
Dice potatoes and carrots and cook in plenty of broth.
Step 2
In the meantime, finely chop the onion and sauté in butter until translucent. Before the onion becomes too fried, add some broth and let it steam until soft.
Step 3
Heat up the milk. Drain the potato and carrots and add them to the heated milk.
Step 4
Mash with a potato masher (you can also use a fork, it will take a little longer) and season with butter, the steamed onions and parsley. Add nutmeg, salt, and pepper to taste.
