Warm green bean, courgette and tomato salad

Instructions

Step 1
Thickly slice the courgette lengthwise (about half cm) and cut slices in half
Step 2
In a frying pan, heat a slosh of cooking oil over a high heat then add the courgettes and brown - 3 or 4 minutes each side. Remove and set aside
Step 3
Turn the heat on the frying pan down to medium low then put a separate pan of salted water on to boil. Add the green beans to the pan of water and simmer till tender.
Step 4
When the frying pan has cooled, add a little more oil and fry the shallots till softened then add the tomatoes and cook for a few minutes more until tomatoes are starting to soften. Add the garlic and tarragon and cook for a minute then add a splash of balsamic vinegar and stir through.
Step 5
When the beans are cooked, drain them and add to the frying pan with the courgettes. Toss it all together, season with salt and pepper to taste and serve warm.
