Instructions

Step 1
Season both sides of the pork chops with salt & pepper
Step 2
Drizzle 1 tbsp of olive oil in a pan and cook all sides of the pork chop, including the edge for 2-3 minutes or until seared to your liking
Step 3
Add 2 tbsp of butter into the pan, cover with a lid and cook for another 5-10 minutes, until it reaches an internal temperature of 145.
Step 4
Remove the pork chops from the pan, place it on a plate, cover it with foil and let it rest for about 10 minutes while you cook the broccoli.
Step 5
In the same pan, add in 1 tbsp of butter, then add in the baby broccoli and season to your liking with salt, pepper and garlic powder. Sauté the baby broccoli for 10 minutes, adding in a teaspoon of water every few minutes to deglaze the pan.
Step 6
In a saucepan, add in 2 cups of the frozen mashed potatoes and heat for a few minutes. Then, add in a spoonful of the Boursin cheese, stir together and heat a few minutes longer until heated through.
Step 7
Remove the broccoli from the pan and plate it. The add 3 spoonfuls f the Ginger Spread (or more) to the pan and bring to a boil. Then add the pork chops back in along with their juices and coat them in the ginger glaze. Heat through for 2-3 minutes.
Step 8
Plate the mashed potatoes and pork chops with the broccoli, then pour the ginger glaze from the pan onto the pork chops and also the mashed potatoes if you'd like.
