Chicken Sandwiches with Stuffing Mayo

Instructions

Step 1
Put the yolks, mustard, salt and vinegar into a bowl and whisk until smooth.

Next, gradually pour in your oils in a thin, steady stream whisking continuously until rich and creamy

Now, chop your sage and add it to your mayo

Then, grab your garlic bulbs. I’ve stipulated to use 2 but you can add less/more as you wish. Peel the cloves and then make 3 cuts lengthways down the bulb. Next, chop the bulb into small pieces and add a pinch of salt. Keep chopping it until it becomes a smooth paste. Now add a tiny bit to your mayo and taste. If it needs more then add it in.

Next, add your onion powder. Again, I’ve stipulated the amount but you can add more/less as you like

Now it’s time to chop your chicken. I opted to shred mine with a fork, but you can chunk yours instead if you like. Add this to the mayo mix and season with salt and pepper to taste

That’s the end of the recipe, I made mine into a yummy sandwich!
